Just over the border in Nassau County is Nitro, a unique shop with locations in Syosset and Merrick where employees make ice cream using liquid nitrogen.
Great for people who love their dessert with a side of wacky science experiment.
Though using liquid nitrogen for ice cream isn’t such a new concept, it’s the distinctive flavors Nitro offers that draw adventurous eaters.
Bacon and eggs flavored ice cream is one of the many alternative options, along with Ketchup & fries, and wasabi.
But its not for everyone. Danielle, a 22-year-old resident of Syosset, has worked at Nitro for two summers. “For the most part I’ve tried every flavor,” she said. “Not the weird ones though, like bacon. I’m scared to.”
For the ice cream traditionalist, there’s chocolate and vanilla.
And for those who want just a little quirk, there are flavors such as Lady Gaga – a neon pink concoction with candy pearls – and Spider-Man – a blue, cherry flavored ice cream with black webbing over the top.
Each treat is made to order. The ice cream itself is made by taking a liquid base (either chocolate or vanilla) and adding color dye and “flavor droplets.” Then, workers add the liquid nitrogen to the other ingredients, creating ribbons of icy cold gas which transforms the raw ingredients into instant ice cream.
Workers are required to wear thick blue gloves while handling the liquid nitrogen because mishandling of it can lead to frostbite, but customers can just use spoons.
